The secret ingredient is chef Toshimi Takiya, who creates amazing dishes that meet half way between Japan and the Mediterranean basin. Renowned classics of Nipponese cuisine include edamame, seaweed salad, miso soup, sashimi, nigiri, maki, and shoyu ramen.
A favorite is the Moshi Moshi roll inspired by emblematic ingredients from southern Europe such as salad Niçoise, vitello tonnato, fatouche salad, etc.
The chef: Toshimi Takiya was born in Japan and lived there until she was 24. She studied at the Tsuji hotel school in Osaka then moved to Lyon, France, where she learned the techniques of French gastronomy. Before joining the Monaco Restaurant Group, Toshimi Takiya worked in French restaurants in Tokyo, and for Wolfgang Puck. In France, she worked at the Bar des Oiseaux in Nice, La Réserve de Beaulieu in Beaulieu, as well as Avenue 31, Song Qi, and Moshi Moshi in Monaco (Monaco Restaurant Group).
